Full disclosure: this was meant to be a Mahi Mahi riff on the classic Pillsbury Veggie Pizza for the Falcons vs. the Dolphins game this Sunday. Unfortunately, I am in possession of a mouth that needed a crazy amount of dental work this week. So instead of the aforementioned fish, I used shrimp because that is what I had on hand.

I love that you can use whatever vegetables your little heart desires.
I used carrots, cucumbers, celery, red pepper, red onion, cauliflower, black olives, and corn BECAUSE I PUT CORN ON EVERYTHING.
I also added a little shredded cheddar, because cheese.
